Hi loves! Today I am sharing a quick and simple recipe for my Loaded Veggie Quinoa, once again featuring my BetterBody Foods Organic Quinoa and Avocado Oil. It is vegetarian friendly and very affordable to prepare. I will list everything you need here, along with the steps for convenience, and the preparation video is a brief 2 minute video. YOU WILL NEED:

BetterBody Foods Avocado Oil
– chopped red onions
– sliced green onions
– sliced organic multicolored bell peppers (red, yellow, orange) sp
– 5 organic carrots, sliced
– 2 organic zucchini squash, sliced in halves
– organic spinach
– spiraled butternut squash
– cooked BetterBody Foods Quinoa
– organic balsamic vinegar
– salt to taste

  1. I love eating healthy during the week so that I can indulge on the weekends. Quinoa is packed with so many great things that it is my go-to instead of rice. I’ve tried several avocado oil brands before and TBH, I don’t like the taste. I know it is really good for you and better to use than other oils, so I will give this brand a try as I really do want to use it when cooking. Thanks for this fab recipe! xoxo, Christine
