GRUB: Vegetarian BBQ Quinoa Burgers

Happy Halloween! 🎃 This burger is one of the best I’ve had; no tricks, all treats! 🤗 I have been inspired by the quinoa burgers I’ve tried in Paris and Phuket recently, so naturally I had to come home and try it out myself. I must also say, this was my 2nd attempt that turned out even more delicious that my first, so I am kind of excited to see what more creative juices I can add to the 3rd one! For now, get your palates prepared for this wholesome yumminess with BetterBody Foods! 😝

You Will Need:
 
  • BetterBody Foods Avocado Oil
  • BetterBody Foods Organic Quinoa, cooked
  • BetterBody Foods Avocado Oil Mayo
  • Dave’s Good Seed Bread
  • Simply Balanced Gluten Free Plain Breadcrumbs
  • Bob’s Red Mill Egg Replacer
  • Stubb’s BBQ Sauce (leave this out for vegan)
  • unsalted organic vegetable broth
  • organic baby spinach
  • organic sliced dill pickles
  • green onions, chopped
  • red onions, sliced
  • white onions, sliced and cubed
  • mixed bell peppers, sliced and cubed
  • jalapeño peppers, sliced
  • basil leaves
  • Weber’s Burger Infusions Garlic Fresco Burger Seasoning
  • granulated garlic
  • sea salt, to taste
  • black peppercorns, to taste
  • garlic salt (optional)
 

how to make quinoa burger patties

Instructions:
    • Start off by cooking BetterBody Foods Organic Quinoa and let cool. For this, I made 1.5 cups.
    • Prepare a cast iron skillet with BetterBody Foods Avocado Oil on medium heat. Sauté white onions and bell peppers until slightly crisp.
    • While this is preparing, mix 2 eggs according to the instructions of the egg replacer. For vegetarian, feel free to use 2 real cage free eggs and skip the vegetable broth! Once done, mix into the cooked quinoa.
    • Add sautéed veggies into the above mixture and add in the slightest bit of vegetable broth for added flavor and to mimic the wetness of eggs. Add in breadcrumbs until you have a slightly sticky texture on your fingers after mixing. Feel free to add more as needed!
    • Reheat cast iron skillet on medium heat and add in more BetterBody Foods Avocado Oil.
    • Add in basil leaves, granulated garlic, sea salt, pepper, burger seasoning and chopped green onions as desired. Feel free to go a bit heavier on the granulated garlic for flavor!
    • Shape mixture into burger sized patties. Once skillet is heated, add them in and add more oil to cover, but not flood the bottom.
    • Start prepping your burger. Feel free to use hamburger buns; I just like Dave’s better! 🙂
    • Add BetterBody Foods Avocado Oil Mayo to one slice, followed by the organic baby spinach and sliced red onions.
    • Flip onto each side to brown. This should be done in a couple of minutes, so keep a close eye.
    • Once done, add Stubb’s BBQ Sauce to each side and heat slightly. Do not overcook.
    • Remove from heat and add your cooked quinoa patty on top of the bread we prepared earlier. Follow with a sliced pickle and lastly, jalapeños. Add another slice of bread on top, slice and enjoy! 🤤🤤🤤
