But let me say this – I will not compromise on flavor! One of my favorite ways to enhance any dish with the bold flavor I love is with De La Viuda hot sauce! Now for the good part. Let me show you how to make my Spicy Vegan Eggplant Stuffed Bell Peppers that pair perfectly with De La Viuda.

First, preheat your oven to 400 degrees Fahrenheit. Poke several holes into your washed eggplant with a fork. The more holes the better! If you don’t, the eggplant could burst from the pressure while cooking. Roast the eggplant in the preheated oven for 30 minutes, then peel and set aside.

Pour the liquid from canned tomatoes into a baking dish, preferably a pot. Slice half of the canned tomatoes and place at the bottom of the pot.

Chop the cooled eggplants and combine them with the remaining tomatoes, garbanzo beans, onions, garlic, cumin, paprika, coriander, salt, onion powder, garlic powder, and pepper to taste. Add in a dash of De La Viuda hot sauce of your choice for extra spice. Combine all ingredients and set aside.

Cut off the tops of the bell peppers and stuff with the tomato mixture. Place tops back onto peppers and bake for 45 minutes.

Spicy Vegan Eggplant Stuffed Bell Peppers

8 organic bell peppers (different colors)
2 organic eggplants
2 14.5 oz. cans of organic whole peeled tomatoes
2 15 oz. cans of garbanzo beans (rinsed and drained)
chopped onion (to taste)
minced garlic (to taste)
cumin
paprika
ground coriander
onion powder
garlic powder
Himalayan pink salt (to taste)
pepper (to taste)
De La Viuda Hot Sauce (to taste)
1)Preheat oven to 400 degrees.
2)Poke several holes into washed eggplants with a fork, the more the better. Roast in oven once preheated for 30 minutes. Peel and set aside.
3) Pour liquid from canned tomatoes into a baking dish, preferably a pot. Slice half of the canned tomatoes and place at the bottom of the pot. Chop cooled eggplants and combine with remaining tomatoes, garbanzo beans, onions, garlic, cumin, paprika, coriander, salt, onion powder, garlic powder, and pepper to taste. Add in a dash of hot sauce for extra spice. Combine well and set aside.
4) Cut off tops of bell peppers and stuff with tomato mixture. Place tops back onto peppers and bake for 45 minutes. 5) Check for pepper tenderness and browning and if not to your liking, bake in additional 15 minutes increments until done. Enjoy with tomato sauce at the bottom of the pot.
